Today we’re two weeks into the quarantine. It feels weird, but cooking at home has been such a nice distraction from the fact that there’s a global pandemic going on right outside my front door. It started out with a lot of frozen food because our kitchen still isn’t 100 percent done. But now we’re on to a solid mix of fresh and frozen. Baby steps!
These lamb burgers were super fast and easy to prep. Ingredients included:
- Frozen lamb burgers (Costco)
- Arugula + spinach mixed greens (leftovers)
- Feta cheese (Trader Joe’s)
- Frozen blend of peppers + onions (Trader Joe’s)
- Garlic aioli (store bought)
- Ciabatta buns (Costco)
- Olive oil spray (for buns)
Prep process took less than 15 minutes:
- Set oven to broil mode on high
- Cut ciabatta in half and spray with olive oil, then broil for 3-5 minutes
- Cook lamb burgers according to whatever instructions you have!
- In the last 2-3 minutes of cooking lamb burgers, add the frozen onion/pepper blend to the same pan.
- Place the burger on the bun, top with pepper/onions, feta and greens. Spread some garlic aioli on the top bun and enjoy!
